Vine variety: typical grapes of the area
Geographical rea of production: Cerignola contryside and the neighbouring towns.
Harvest: from the first decade of September.
Wine making: as they reach the wine cellar grapes are immediately destemmed and crushed with an horizontal grape trader. The crushed grapes are sent to the presses, where a vacuum pressing occurs at around – o,8 bar. The must obtained is cooled and immediately separated from the lees. In the so obtained juice highly selected yeasts are triggered, which start the fermentation process at temperature of 15°c. Afer about 12-15 days of fermentation the wine is decanted from the big lees and let it sit
on the fine lees for about two months before being bottled.
Organoleptic characteristics: white wine made from typical local grapes. Straw yellow colour, particularly fragrant and strong. The wine shows a well-balanced palate.
Wine and food pairings: ideal with fish and seafood. Serve at a temperature of 14°.
